From the late 1800s well into the 20th century, Wisconsin — protecting its powerful dairy industry — passed laws that made it illegal to sell, serve, or even color margarine to look like butter. Some restaurants had to smuggle it in or serve it dyed pink to stay legal. Parts of these restrictions lasted until 1967, long after most Americans had forgotten about them.
